Grilled Pineapple and Shrimp Skewers
 

Memorial Day barbecues are just a few days away. Burgers and hotdogs are the usual barbecue staples, but why not try something a little different this year. Why not make pineapple and shrimp skewers with a delicious teriyaki sauce? It's yummy, it's good for you, and your cookout guests will love it.

Health Benefits

What's not to love about pineapple? It's rich in vitamin C and manganese, which can help your body reduce inflammation and fight off free radical damage. Plus, the shrimp in this recipe is rich in protein and other nutrients, including vitamin B12. Teriyaki Grilled Shrimp and Pineapple

(Recipe adapted from Closet Cooking)

Ingredients

Teriyaki Sauce

  • 1/4 cup of soy sauce (or tamari for gluten-free)
  • 1/4 cup of pineapple juice
  • 1/4 cup of brown sugar, packed
  • 2 teaspoon of garlic, grated
  • 2 teaspoon of ginger, grated
  • 1 tablespoon of sriracha (or to taste)

Skewer

  • 1 pound of large shrimp, peeled and deveined
  • 1 pineapple, peeled and sliced into 1/2-inch by 2-inch pieces
Directions
  1. Combine the soy sauce, pineapple juice, brown sugar, garlic, ginger, and sriracha into a saucepan. Let the ingredients simmer on the stove until the sugar has melted. Stir the ingredients together and set aside until the sauce has cooled.
  2. Pour the marinade sauce, the pineapples, and the shrimp in a food storage bag. Marinate for 30 minutes or longer, if possible.
  3. Remove the shrimp and pineapple from the marinade sauce and skewer them alternating between the shrimp and the pineapple.
  4. Grill the skewers over medium heat until cooked and slightly charred. This can take between two to four minutes per side.
Serving Options

Now that you've got your pineapple and shrimped grilled, it's time to think about serving options. You can take your pineapple and shrimp, grill some extra bell peppers and onions, and serve the whole thing over rice. Are you looking for something lighter? Consider topping your summer salad with the pineapple and shrimp. Add grilled mango and bell peppers to your salad as well. Or simply serve your grilled goodies in a hot dog bun with tomatoes, red onion, and dill pickles.
