Create a batch of Colorado author Judith Briles' Yellow Zucchini Soup Sippers served in small dessert glasses—she promises that the entire pot will disappear. Then add a combo with Marinated Flank Steak Crostinis; her Stuffed Figs with Goat Cheese and Honey; and round out your place with her Dates with a Zest that includes a kiss of Apricot jam, a soft cheese of choice, and a sprinkling of orange and lemon zest on top. In her new cookbook, Colorado author Judith Briles serves up over 80 tantalizing and easy recipes in Appetizers with Judith (Mile High Press 978-1885331175). She openly suggests splurging your taste buds with a variety of her appetizers and making it a meal for your next gathering of friends or an end-of-summer soirée! Dates with a Zest! Medjool dates are large dates in the "easy peasy" category that add a smidge of sweetness and a taste of caramel-like flavor to your appetizer offerings. All it takes is three ingredients. You want the ones that are pitted, leaving a slit in the date is ideal for stuffing of some sort. Stuffing is usually a cheese—think Boursin, goat, or a bleu cheese. When seasonal goat cheese with cranberries surfaces in November, this adds an extra taste; op. For this one, add a sprinkle of zest once you stuff your choice of cheese on top … and you are done. | | | | | | | Makes: 20 dates | prep time: 15-20 minutes | cooking time: none Ingredients 20 Medjool dates, pitted 8 oz. cheese of your choice—Boursin, goat—plain or with cranberries, bleu cheese 3T apricot jam 1 orange, zested 1 lemon, zested Putting it all together Step 1: Remove your cheese of choice—or mix it up and have a variety—and soften to room temperature. You can make ahead and refrigerate. Remember to bring them out before serving so the cheese is at room temperature. Step 2: Zest your orange. For a colorful visual variety, you could add in lemon zest, even lime—just a small amount. You want the orange to be the dominator. Step 3: Open the slit on the Medjool dates. Add less than ½ oz of cheese, then ½ tsp of apricot jam. Step 4: Sprinkle zested orange and lemon on top. Serve. | | | | | Dr. Judith Briles is the award-winning and bestselling author of 49 books and calls Colorado home.
