 For every year from November through December, food is a central focus of all of us in our families and in our businesses.  This season permits a lot of family re-unions, eating out more than normal for many families and individuals. There are numerous celebrations and attending events everywhere; when and where foods are consumed in large quantities.  For the safety of our customers and each family member, food must be cared for to remain suitable for human consumption during this entire season and at all times. Remember to cook all hot foods to the required cooking temperatures and maintain them hot to at least 135 degress F. until service, and that cold foods are carefully prepared without any cross contaminations and kept cold at 40 degrees F. or below.  Many a times, cooked and hot foods must be kept cold in cold hold units; until services are rendered.  In the preparetion process, personal hygiene for each and all food handlers is of primary importance.  When we remember to keep all foods safe, our re-unions, unions, visited events and celebrations will be remembered with good memories until the next year and forever.  Safe food is the best diplomatic weapon we are using today.  Enjoy your holiday season well.
